Chunky Chocolate Jazz Cakeies

I'm going to hold my hands up now and admit that these did not turn out how I wanted them to, They were supposed to be, well you know...normal flat cookie shape. They were an accidental tasty mistake so I thought I'd share exactly how to make these scrummy little chunks of goodness! They're texture is between a cookie and a cake, so we're going to call them cakeies!

You Will Need:
125g softened butter ( I used clover light which is maybe why they went like this)
100g brown soft sugar
1 medium egg, lightly beaten
225g Self-raising flour
2 splashes of milk
As much chocolate as you want, I used broken up easter egg
Lots of Jazzies!!!

Method:
1. Preheat the oven to 180°C
2. Cream the butter and sugar together, before mixing in the egg
3. Sift in the flour and mix well to form a dough, adding the 2 splashes of milk to help it all stick together
4. Break up your chocolate and Jazzies and distribute them through the dough. I'd give you a precise measurement but lets face it, you're probably going to eat half of it anyway

5. Roll the dough into walnut sized ball and place on a grease-proof paper covered baking tray and bake for around 10 mins, until the tops turn golden

The Festive Build up

I am so happy to have a spare bit of time to myself to write a post. It has been a while now! Sadly, I forgot my charger for my camera when I came home for Christmas so I'm afraid these pics are just from my phone- sorry!

With Christmas quickly approaching, I wanted to bring some of that festiveness to my blog :)


Last weekend, Tom and I decided to make some iced Christmas cookies to share with friends. We used this recipe, which is ironically called Easter Biscuits but never mind..it worked! We left out the cinnamon and currants though and just stuck to vanilla essence (so actually we forgot to put that in but I recommend adding a drop or two!).

Both are the sort of biscuits you made in primary school and they bring back so many childhood memories making (and eating) them.


I drove home for Christmas on Thursday and walked in to my bedroom to find my parents had got me a brand new bed, bedding and fairy lights as an early birthday present. My mum also got me a little Christmas tree which I am in love with!! 

The bedding is from Asda, who apparently have a fair few festive designs out at the moment. I love how it's Christmassy without being too tacky. Just a nice subtle nod that says "yes, it's winter." 

The fairy lights that you can just about see are little pine cones, made from silver and white glass! They're so cute!

Finally, I just wanted to mention a little something I treated myself to; the Soap and Glory Box! You get 9 full size products for £30 which I think is an absolute steal when you think how much the products are individually. I got one last year and I still have some left over - it really is fab!

The little things

It's been tough these few last weeks with exams. I don't think I've ever been that stressed in the exam season before. There were A LOT of tears, tantrums and sleepless nights.But I am soooo happy to have finally made it through to the other side!! If you haven't made it through the exam period yet, I wrote some tips here that can help you revise :) Also if you're a worrier, have a look at my post on 10 ways to worry less

I had my first day off in ages today and managed to fill it with lots of lovely little things that make me happy. Starting off with a nice long lie in and then some back to back watching of Grey's Anatomy! 



I made some of these delicious double chocolate cookies as I'm going for a picnic tomorrow and who doesn't love baked goods?! I got the recipe from the lovely Ioanna whose blog and recipe you can find here. I had one just as it came out the oven and it was actual heaven. Melted chocolate, gooey vanillaness mmmmm. You should make them.

I also had to sneak this gorgeous mug* I was sent from Getting Personal into the photo. I'm really pleased with the quality of the print on it and it makes me really proud of my blog, seeing it printed on something like that. 


Whilst shopping for my baking ingredients, I spotted the flowers section and before I had time to think about it, my feet were already taking me over to them. You just can't beat fresh flowers in your room and you know, someone has to get you flowers, it might as well be yourself!! They were only £2.50 as well. You don't have to go on a massive splurge to treat yourself.



There was also some Glade candles at half price in Tesco, so of course, one of those was popped in my basket too :) I went for Bali Sandlewood and Jasmine. I've gotten into the habit of lighting a candle every night before bed as well as burning them almsot nonstop throughout the day so I get through them very quickly!


I'm really happy with my notebook* too which I'll be using to write down any blog ideas I have!! 

Baking, watching my favourite tv shows and chilling with a candle on and a cuppa in hand is how I like to relax. It's been nice just spending time by myself to unwind. All the hard work and stress you go through during difficult times makes days like these so much more appreciated. I haven't done anything overly exciting but it's just been nice :)

I absolutely love baking and I usually end up doing it on a Sunday afternoon. The end result can be hit or miss but this time it was definitely a hit!!

I didn't really know what to make, but wandered to Tesco for some inspiration..threw some white chocolate and cranberries into my basket (a classic combo) and skipped back home, in the hope I could actually find a recipe!

Bliss is what happened....


I adapted this recipe to make them and they genuinely do taste like they could be from Millie's!


Slightly cripsy on the outside and oh so moist in the middle....

(I hate the word moist too, but when it comes to cookies, it's necessary!)

The cranberries burst with sweetness in your mouth and if you eat them whilst they're warm, the white chocolate will be all melted and delicious..


I recommend eating them after they've slightly cooled but are still warm, along with a cold glass of milk!

To have a go yourself, you will need:

125g butter (leave it out the fridge so it softens)
225g of caster sugar
1 egg, beaten
1tsp vanilla extract
225g self raising flower
A pinch of salt
150g white chocolate
135g dried cranberries

1. Preheat the oven to 180 degrees

2. Cream the butter and sugar together and then add the beaten egg and vanilla extract

3. Sift in the flour (I actually don't have a sieve - student life! - but it worked fine without) and throw in that pinch of salt

4. Roughly chop up your white chocolate into chunks of whatever size you want and add that, along with your cranberries

5. Knead the mixture into a dough. If it's not sticking together then add a splash of milk

6. Roll the dough into balls, just slightly bigger than a walnut and place on a greased baking tray

7. Pop in the oven for about 10-12 minutes - when they come out they should still be soft, but will harden as they cool, yet remain soft in the centre
